Ingredients

for 18 knots

Dough:

  • 1 ⅓ cups warm water
  • ½ tablespoon sugar
  • 4 tablespoons olive oil, divided, plus more for brushing
  • 3 ¾ cups bread flour, plus more for kneading
  • 2 ¼ teaspoons instant yeast
  • 1 teaspoon kosher salt

Garlic Butter:

  • 1 cup (2 sticks) unsalted butter
  • 50 cloves garlic, minced
  • ½ cup grated parmesan cheese
  • 2 tablespoons finely chopped fresh parsley
  • ½ teaspoon kosher salt

Preparation

  1. Make the dough: In the bowl of a stand mixer fitted with the hook attachment, add the water, sugar, 3 tablespoons olive oil, flour, yeast, and salt. Mix on low speed until the dough starts to come together. Increase speed to medium and knead for 7-10 minutes, until the dough is soft and elastic. The dough should spring back when touched.
  2. Grease a clean large bowl with the remaining 1 tablespoon olive oil. Add the dough, cover the bowl, and let rise in a warm place for about 1 hour, or until doubled in size.
  3. Meanwhile, preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  4. Divide the dough into 18 equal pieces. Working one at a time, roll each piece into an 8-inch log. Tie each log into a knot, tuck the 2 ends underneath, and place on the prepared baking sheet.
  5. Use a pastry brush to lightly brush each knot with olive oil. Bake in the preheated oven for about 15 minutes, or until golden brown on top.
  6. While the knots are baking, make the garlic butter: Melt the butter in a large high-sided skillet over medium heat. Add the garlic and cook for about 5 minutes, or until fragrant and softened. Stir often to prevent burning.
  7. Transfer garlic butter to a large mixing bowl. Let cool slightly, then stir in the Parmesan cheese, parsley, and salt until combined.
  8. Remove the knots from the oven. Let cool slightly, then transfer them to the garlic butter mixture. Toss until evenly coated and serve immediately.
