Ingredients
for 18 knots
Dough:
- 1 ⅓ cups warm water
- ½ tablespoon sugar
- 4 tablespoons olive oil, divided, plus more for brushing
- 3 ¾ cups bread flour, plus more for kneading
- 2 ¼ teaspoons instant yeast
- 1 teaspoon kosher salt
Garlic Butter:
- 1 cup (2 sticks) unsalted butter
- 50 cloves garlic, minced
- ½ cup grated parmesan cheese
- 2 tablespoons finely chopped fresh parsley
- ½ teaspoon kosher salt

Preparation
- Make the dough: In the bowl of a stand mixer fitted with the hook attachment, add the water, sugar, 3 tablespoons olive oil, flour, yeast, and salt. Mix on low speed until the dough starts to come together. Increase speed to medium and knead for 7-10 minutes, until the dough is soft and elastic. The dough should spring back when touched.
- Grease a clean large bowl with the remaining 1 tablespoon olive oil. Add the dough, cover the bowl, and let rise in a warm place for about 1 hour, or until doubled in size.
- Meanwhile, preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Divide the dough into 18 equal pieces. Working one at a time, roll each piece into an 8-inch log. Tie each log into a knot, tuck the 2 ends underneath, and place on the prepared baking sheet.
- Use a pastry brush to lightly brush each knot with olive oil. Bake in the preheated oven for about 15 minutes, or until golden brown on top.
- While the knots are baking, make the garlic butter: Melt the butter in a large high-sided skillet over medium heat. Add the garlic and cook for about 5 minutes, or until fragrant and softened. Stir often to prevent burning.
- Transfer garlic butter to a large mixing bowl. Let cool slightly, then stir in the Parmesan cheese, parsley, and salt until combined.
- Remove the knots from the oven. Let cool slightly, then transfer them to the garlic butter mixture. Toss until evenly coated and serve immediately.
